ABOUT THE WORK
In the northern West Bank village of Faqu’aa—near Jenin, Nazareth, and alongside the apartheid wall—one woman tends the fire that feeds a tradition. Known locally as Umm al-Bandoura, the Mother of Tomatoes, she spends her days stirring vast pots of tomatoes over woodfire, transforming them into a thick, smoky sauce. In a time when convenience often comes at the cost of flavor, she insists on the slow way—the old way—preserving a taste and a method that is increasingly rare. Tomatoes cooked over woodfire simply taste better. And the sauce she makes becomes the base for shakshouka, even when it’s cooked on a gas flame. Just a spoonful carries the depth of the fire, making it feel as though you cooked it on wood yourself.
